Welcome to our craft distillery, where we proudly produce exceptional spirits right on site. Nestled in the heart of our community, we are passionate about crafting unique flavours that reflect the essence of our region. Using only the finest locally sourced organic grains, we meticulously mash and ferment them, harnessing their natural characteristics and transforming them into the highest quality spirits.

The base of all our spirits are made with a mix of Triticale grains and malted barley, all grown in BC and grown certified organic at Fieldstone Organics in Armstrong, BC. 

At our distillery, we believe in the power of local ingredients and the impact they have on the final product. We work closely with local farmers, handpicking the best grains that showcase the rich flavours of our area. From the moment the grains arrive at our doorstep, we handle every step of the process with utmost care and attention to detail.

Our experienced team of distillers skillfully transforms the mashed grains into flavorful washes which are then carefully fermented to make what we call a distillers beer of 7-9% abv. This is the foundation for our base for our spirits. We believe that the journey from grain to glass is an art form, and we take pride in every batch we produce.

Distilling is not just a process for us; it's a passion. We combine traditional techniques with modern innovations and technology to ensure our spirits are of the highest quality. From our handcrafted copper stills to our rigorous quality control measures, we strive for excellence in every bottle.

Nosing, and tasting spirits in a professional manner is an art that requires attention to detail and a trained palate. To fully appreciate the complexities and nuances of a spirit, follow these steps:

  1. Nosing: Begin by a very gentle swirl of the glass to release the aromas. Place your nose just above the rim and take short, deliberate sniffs. Identify the different scents and try to distinguish individual notes. Look for characteristics such as fruits, spices, grains, and oak. Take your time and let the aromas unfold. Once you have identified the initial aromas, take a deeper inhale to explore the layers of scents. Pay attention to any changes or evolving notes. Think about the intensity, balance, and complexity of the aroma profile. Consider how the different elements come together to create a harmonious bouquet.

  2. Tasting: Take a small sip and let the liquid coat your entire mouth. Notice the initial flavors on your palate. Is it sweet, bitter, or spicy? Then, focus on the mid-palate, where the flavors develop and reveal more complexity. Consider the texture and mouthfeel— is it smooth, creamy, or full-bodied? Finally, observe the finish, which is the lingering taste after swallowing. Reflect on the length, intensity, and any additional flavors that emerge.

  3. Evaluating: Take a moment to reflect on your overall experience. Consider the balance, complexity, and integration of the aromas and flavors. Think about how the spirit evolves from the initial nose to the final finish. Pay attention to any unique characteristics or standout qualities that make the spirit memorable.

1. VODKA

With locally sourced Juniper, huckleberries, spruce tips and ponderosa pine and wild flowers our 16 botanical gin stands out among the best in the world.

3. VULCANS FIRE

Indulge in the captivating allure of Vulcans Fire, our remarkable cinnamon liqueur that combines a blend of apples, cinnamon, honey, maple syrup, and red Thai chili peppers on an unaged whisky base spirit. While boasting a subtle nose with distinct cinnamon notes, the experience on the palate can be perceived as diluted and lacking clarity. However, the muddled spice impressions on the finish, accompanied by a well-balanced burn, add a touch of intrigue. 4. WHISKY - DAYS OF DARKNESS

Trepidation - Bourbon Style Whisky
70% Corn - 10% Wheat - 20% Malt
New American Oak - Char #4

An incredible balance on the nose, with rich caramel, delicate vanilla wafers, and a floral bouquet of orange blossoms intertwined with baking spices. Fresh green apples and cereal bring vibrancy, while ripe yellow pears and dried apricots add depth and complexity. The palate reveals indulgent candied corn, buttery popcorn, and the allure of caramel and vanilla. Subtle notes of fresh new leather, roasted almonds, and sweet almond oil contribute a nutty richness. A touch of tobacco leaf and Halloween caramel candies add layers of complexity. The long-lasting finish delights with the lingering sweetness of vanilla and caramel, complemented by a subtle spiciness from heavily charred oak barrels.
